I am Carbon Neutral Farmer but known by some as Kathy. I make fruit vinegars and have a mob of ducks for some reason. I am keen to make the most of the bountiful harvest and reduce fruit waste towards value adding for health and shelf life and hopefully inspire others to turn low value fruit to high value end product.
I operate under the banner of Recherche Fermenterie where a range of experiments help to improve the production techniques and ultimately the product.
Because I only use traditional methods of fermentation I have plenty of time to lie around the pool with my friends, gaze up into trees and wonder why. Trouble is my friends always hog the limelight when taking pictures but what can you do?
